Along these lines you could also have a bad fuel pressure regulator.A couple of weeks ago the electric radiator fan came on during a 2 hour drive and was very loud. After that day, that fan now comes on at full speed whenever driving more than about 10 miles on the highway. At full speed, its loud! The fan control/relay was shot and the electric fan was not cutting on. I checked the fan by running a + and - from the battery. Fan worked. Started it up waited a while and the fan would not come on.

From what I can find the 3.6L V-6 takes a 203 degree thermostat. It sounds like you are describing some sensor issues that occur when the the Jeep switches to closed loop operation. Test the O2 sensors, they can get old and slow to react.
